He built a company where leaps of theimagination were combined with remarkable feats of engineering. He encouraged the people he knew to speak honestly.

I don't often buy German-style dark rye bread, but when I spotted some at Trader Joe's the other day, I knew it would be perfect for the Swedish-inspired salmon sandwiches I'd been wanting to make. I ditched the original recipe's finger-sandwich suggestion and made full-size but dainty sandwiches instead. Layering smoked fish on dark bread definitely has a Scandinavian feel, but the wasabi cream cheese adds an eye-opening Japanese kick. The nutty bread combined with velvety fish, creamy avocado, and even creamier spread makes for a cold sandwich that's hearty enough for dinnertime. My only complaint was that the wasabi — which I love — was too subtle. Next time, I'd mix in more, and if you like the tingly mustard, I suggest you do the same.

Extra Crispy Chicken

Extra Crispy Chicken

One of the delicious Swiss and Italian dishes that you can make is Crispy Chicken. Prepare this dish yourself! Here are the list of ingredients that you’ll need: black pepper, herb seasoned stuffing mix, grated parmesan cheese, ground red pepper, chicken, stick butter, buttermilk and salt.Combine breadcrumbs, Parmesan cheese, lemon zest, paprika and salt on a shallow plate. In a separate shallow dish, combine lemon juice and 1 tbsp water.Dip each side of the chicken breasts into the lemon juice and water mixture, then in the Parmesan cheese/breadcrumb mixture until both sides are well coated. Place into the baking pan and bake in the oven for about 25-30 minutes or until the chicken is no longer pink inside.
Serve immediately with a vegetable side dish and homemade sweet potato fries.

The sandwich features a decent-sized chicken patty breaded in the Colonel's Original Recipe seasoning and served on a warm bun with lettuce and mayo.It would have been okay if the lettuce wasn't soggy without any hint of crispness. In fact, the lettuce was so soggy it was a bit chewy. When I got my “Now Eat This” cookbook I was reading through all the wonderful recipes and I came across this recipe for General Tso’s Chicken and I knew immediately that I had to try it to see how it compared to the take-out version.  This recipe was not a let down; the chicken was crispy, the sauce was sweet and spicy and you would never know that this was a made over, lighter version of the original recipe.  The next time your in the mood for take-out try this recipe instead, I promise you won’t be disappointed.

Chicken Tenders Sandwich

Chicken Tenders Sandwich

I like Carl's Jr.'s Chicken Tenders and how well they go with honey mustard sauce; the sauce adds a light sweetness and mustard flavor that fits in well with the rest of the ingredients. There was enough chicken to fill out the bun (but chicken tenders tend to vary in size so your mileage may differ). The lettuce and tomatos were fresh and of good fast food quality. I enjoyed this one quite a bit. Honey mustard is an overlooked but enjoyable twist to the standard chicken filet sandwich and Carl's chicken tenders are yum. You just have to be careful to grip the sandwich carefully and adjust for interior shifting. Don't walk while eating one of these. The sandwich would have been better served if Carl's Jr. used the sturdier sesame bun instead of the more fragile plain bun.

I have to admit that even though I am an avid home cook and baker, I still carry a soft spot in my heart for fast food.  Of course I couldn’t eat it every day, but I do occasionally indulge my soft spot with a Wendy’s Spicy Chicken Sandwich, a Whopper Jr. with cheese, or my very favorite McDonald’s french fries. And how could you look at that picture and not think of McDonald’s (love their hash browns, too).  Luckily, this version of an Egg McMuffin is easy to make at home and tastes even better, especially after making my own English Muffins. Here’s the real trick, though:  Egg Fry Rings from Williams-Sonoma.  In order to get that thick round of fried egg just the perfect size for an English Muffin, these are the answer.  Here’s what you do:  Spray the insides of the rings and a non-stick skillet with cooking spray (VERY important).  Place the ring in the skillet and crack an egg into it (you can also add a tiny pat of butter before putting in the egg if you like).  Cook to your liking on one side, then remove the ring by sliding a knife around the edges and flip the egg.  Then just toss a piece of Canadian bacon in the pan while your egg finishes cooking to brown it on each side.  Toast the English Muffin if you care to, and then fill with the meat, egg, and your  favorite cheese and voila.
